Obviously, times have changed. Just because our ancestors perhaps ate eggs raw and whole doesn't mean we have to. I much prefer avoiding salmonella, and so I cook them. And I don't like eggs so much, anyway - bits of shell would really mess up the asthetics of French toast.
Oh, and the impression I'm getting from reading up on egg shells on the Web tells me that the calcium in egg shells isn't very bioavailable unless it's separated from the membrane (largely collagen) and then powered. I doubt that chewing would do a good job at this, and there's a decent amount of calcium available in the egg yolks, anyway.
