Evolution as an "unrolling" or change over time could indeed apply to chemical compounds, even when it's not evolution by lifeforms. For prions, "unrolling" (the meaning of the Latin source of "evolution") may be especially apt, as the topology of prions determine their effect on other molecules.

The word "evolution" is versatile, and can be applied to many contexts besides the biological one.

Stellar evolution isn't about populations of stars that live and die, and are subject to natural selection that causes them to change.

Computer programs evolve as they change revision, when bugs are fixed and new functionalities are added by programmers.

I think most things will change to suit their environments or eventually be destroyed by it. But if something changes, has it not essentially been destroyed anyway?
