This is the first time I've seen this aspect of a shuttle launch.
NASA attached a audio/video camera to one of the space shuttle's rocket boosters. The video appears to start about 15 seconds after launch. You may want to turn your audio down a bit.
At around 120 seconds, you can easily hear the explosive bolts releasing the boosters from the shuttle at the upper reaches of the atmosphere.
Note at about 289 seconds the look-back showing the distant launch plume. Nearing the end, the video switches to a top mounted camera showing the parachutes being deployed and splash-down of the rocket booster.

What's with the optics? Why does the curvature of the Earth appear to change from convex to concave? |

You mean the first video?... my guess it's a ultra wide angle lens they're using that causes some distortion, along with rotation of the camera's position relative to the earth. |

Yes, that's a classic fish-eye distorsion from an ultra wide angle lens.
