This is the first time I've seen this aspect of a shuttle launch.

NASA attached a audio/video camera to one of the space shuttle's rocket boosters. The video appears to start about 15 seconds after launch. You may want to turn your audio down a bit.

At around 120 seconds, you can easily hear the explosive bolts releasing the boosters from the shuttle at the upper reaches of the atmosphere.

Note at about 289 seconds the look-back showing the distant launch plume.

Nearing the end, the video switches to a top mounted camera showing the parachutes being deployed and splash-down of the rocket booster.

Fantastic!

What's with the optics? Why does the curvature of the Earth appear to change from convex to concave?

You mean the first video?... my guess it's a ultra wide angle lens they're using that causes some distortion, along with rotation of the camera's position relative to the earth.
