I found an entertaining and informative show by National Geographic called World's Toughest Fixes. It has some science but mostly engineering and one-the-ground difficulties of installing or replacing large pieces of equipment in a time frame.

A favorite episode involved the VLT (Very Large Telescope) in Peru where the giant mirror must be removed, cleaned and re-coated every 18 months, and how it can all get put on hold for hours because a mundane drain won't work.

Another episode involved a 300' tall wind turbine and the irony of needing it to not be windy during installation.
